County legislature talks Greek yogurt

It's a high protein, low fat snack that is high in demand and that's certainly got the attention of local farmers. YNN's Carmella Mataloni has more on how Jefferson County is among those looking to jump on the Greek yogurt craze.

JEFFERSON COUNTY, N.Y. -- The sweet taste of Greek yogurt is finding its way into more and more shopping carts across the state of New York, causing a rise in sales and a high demand for milk. The yogurt boom will keep farmers at a steady balance, something the Jefferson County agriculture coordinator says may not have been there before.

“It provides a solid market for any milk that our farms produce. There will be a place for it to go where in the past there might not have been,” said Agriculture Coordinator Jay Matteson.

As Jefferson County is looking toward the future, agriculture coordinators say dairy farmers could capitalize on Greek yogurt since there will be a four billion pound demand for milk over the next two years.

One county legislator who is no stranger to the agriculture industry says even though there are signs of opportunity, it’s still a risky business.

John Peck, who is a county legislator, is also a farmer himself, says that it’s all up to the price structure and the way the federal milk marketing order is constructed.

Peck said, “There is a lot of capital that goes into it and honestly, it’s risky business to get into if you can’t get the federal government to do something about the milk pricing order and to do something to fix these kinds of quirks like this."

Although there are still economic factors to figure out, Peck says that he does see opportunity somewhere down the road.
